Cardamom Buckwheat Waffles with Maca Chocolate Sauce

I teamed up again with Raaka Chocolate to create a recipe to celebrate the launch of their new Waffle Cone Squares!

They make the perfect sweet treat when you just need a little bit of something chocolatey and crunchy.

What I love about Raaka is that they make unroasted dark chocolate from scratch, with traceable, high quality, and transparently traded single-origin cacao, crafted into something uncommonly delicious.

This recipe is a play-off of the waffle cone chocolates and makes a decadent breakfast or brunch for a special occasion. The nuttiness of the buckwheat pairs well with the chocolate, so it’s not overly sweet.

Of course, feel free to sub the flour for gluten-free flour or any dairy with non-dairy alternatives.

You can also spike the chocolate sauce with your favorite adaptogen, but I used maca root since its flavor is malty and pleasant.

Maca is a warming nutrient-rich adaptogen that helps to support healthy energy, hormones, and mood. Something I feel like we all could use a little more of as we leave winter behind and head into spring full force.

Try using it in warm drinks or elixirs, spice blends, or nut butter bites.

If you don’t already have a waffle maker, I picked up this one and happen to really like it. Okay, now on to the recipe.

Cardamom Buckwheat Waffles with Maca Chocolate Sauce 

Ingredients

1 cup buckwheat flour

1 cup all-purpose flour

1/4 cup sugar

1 teaspoon ground cardamom 

1 1/2 teaspoons baking powder

1/2 teaspoon fine salt

1 large egg

1 1/2 cups milk (dairy or alternative)

1 teaspoon vanilla extract

1/2 stick unsalted butter, melted and cooled

For the chocolate sauce 

1 cup Raaka baking chocolate or 1 chocolate bar, chopped 

1 tablespoon maca powder, optional 

¼ cup heavy whipping cream

Pinch of salt 

  1. In a mixing bowl, whisk the dry ingredients to combine. 

  2. In a separate bowl, whisk the egg, milk, vanilla extract, and melted butter together then gently fold into the dry ingredients. 

  3. Let the batter rest for 10 minutes while your waffle iron warms up. 

  4. Add a little butter to the waffle iron and ladle in ½ cup of batter to cook until crispy. Repeat with the remaining batter. 

  5. For the chocolate sauce, set a glass or metal mixing bowl over a pot of simmering water, making sure the bottom is above the water and not touching. 

  6. Add the chocolate, maca powder, heavy whipping cream, and salt then gently stir until melted. 

  7. To serve, divide waffles among plates and top with warm chocolate sauce.
